Each of the four components of this wine was aged in neutral barrels for seven months before being racked to a bottling tank. The carbonic was uncrushed whole clusters into a sealed up tank for 2 weeks – then pressed and fermented in neutral barrels. Each pick was divided into two; carbonic maceration and a reverse saignée. The reverse saignée is where half of the total fruit was added to a fermenter as uncrushed whole clusters. The other half is direct-pressed juice that is pressed into those clusters where it’s pumped over daily. The grapes came were foot crushed, macerated overnight, and then pressed to a stainless tank for fermentation. After primary fermentation, the wine was racked off the lees. We made an addition of unfermented grape must before bottling and bottled under crown cap with 12g of residual sugar from the addition. As always, bottled unfined, unfiltered, and with no addition of SO2.

We want to make sure you get your wine, so please make sure someone is there to sign for it when it comes. The delivery service will make three attempts before returning the shipment to our fulfillment center. Note that there will be a restocking fee for returned shipments. We believe in old world style with fresh appeal starting with exceptionally farmed organic grapes. In the cellar we add nothing to the wine – no added sulphur, commercial yeasts, nada.
The Zinfandel and Cabernet Sauvignon grapes were pressed (separately) as rosé and fermented for a week on Chenin Blanc skins in S48s. The juice was transferred to a brite tank where it finished fermentation. https://turbo-tax.org/subject-to-change-2021/ The brite tank was sealed up before fermentation finished, trapping the CO2 from the end of the ferment making the wine naturally sparkling. As always, no fining, filtration, or addition of SO2.
